We begin in Stockholm at ⭐⭐⭐ Frantzén, before flying to Oslo for an extraordinary evening at ⭐⭐⭐ Maaemo, enjoyed in the intimacy of their private dining room.

From there, we continue to Copenhagen, arriving in time for one of the most ambitious dining experiences in the world at ⭐⭐🍀 Alchemist.

A major highlight of this year’s tour is a visit to Noma (⭐️⭐️⭐️🍀) in Copenhagen. Reopening following its acclaimed Los Angeles residency, Noma remains one of the most influential restaurants of the modern era and one of the world’s most sought-after reservations. Dining here offers a rare opportunity to experience the restaurant as it embarks on an exciting new chapter in its home city.

Copenhagen then delivers one of the great days in global gastronomy: lunch in the private Inspiration Kitchen at ⭐⭐⭐ Geranium, followed by dinner at ⭐⭐⭐ Jordnær — a perfectly balanced six-star day showcasing the elegance and precision of modern Nordic cuisine.

We then step away from the cities and into the wild, travelling to ⭐🍀 Knystaforsen, where Nicolai and Eva Tram have created something truly special — a place of smoke, fire, and deep connection to nature. Along the way, a surprise lunch awaits.

After a night in the forest, we return to Copenhagen to close the journey at one of Denmark´s most grand hotels. A refined private lunch at ⭐ Marchal, set within the iconic d’Angleterre, where a specially devised menu for our group showcases the great traditions of art de la table — from duck à la presse, pithiviers and turbotière to crêpe Suzette and the theatre of the cheese chariot, the chefs at Marchal will be showing off the absolute best of Marchal´s menu and opening up just for us in a private salon.

Should a change be required, an alternative restaurant of equal or greater quality will always be arranged. Such changes do not entitle guests to a refund, discount, or cancellation.

Alchemist ⭐️⭐️🍀

What to say about what is in my opinion the best restaurant on the planet at the moment. 

The alchemists of old aimed to purify, mature and perfect physical objects. In the same way the restaurant Alchemist team aim to transform and transcend the nature of food and dining.
The Alchemist experience is truly one not to be missed and should be at the top of any serious eaters bucket list.
During the evening you will be guided on a parallel journey through Alchemist’s unique physical spaces, as well as through your own senses. Expect a 5 - 7 hour culinary adventure that you will never forget.

Frantzén ⭐️⭐️⭐️

Our journey begins at ⭐⭐⭐ Frantzén, where Björn Frantzén has created one of the most complete dining experiences in the world. Moving through a series of beautifully designed spaces, the evening is carefully choreographed from start to finish — combining technical brilliance with warmth and personality. It’s an experience that feels both highly polished and deeply personal, setting the tone for everything that follows.

Jordnær ⭐️⭐️⭐️

Jordnær Copenhagen is for when you get tired of Smørrebrød and New Nordic and just want a seamless gourmet dinner with caviar, truffles, caviar, langoustine, more caviar, king crab and other wonderful treats. In addition to the deliciousness on offer King Eric and Queen Tina offer a front - back of house combo that is difficult to match anywhere in the world.

The focus is on seafood here of exceptional quality that is treated with precision and love. King crab, hamachi, trout roe, “Fjord” shrimps, mahogany clams, scallops, lobster, langoustine, oysters, cod, turbot, mussels are all represented on the 20+ course menu. And of course caviar & truffles by the bucket load. Eric always says, “only the best for our guests”, and that’s what everyone gets. He has been known to have a stern word with any of his chefs that don’t put enough (!) caviar on a dish. 

Maaemo ⭐️⭐️⭐️

In Oslo, we dine at ⭐⭐⭐ Maaemo, one of the most distinctive voices in modern Nordic cuisine. Our evening is set within the restaurant’s private dining room, offering a more intimate and personal way to experience Esben Holmboe Bang’s deeply expressive cooking. Rooted in nature and shaped by the Norwegian landscape, the menu unfolds with precision, clarity, and a quiet sense of drama — a truly special moment in the journey.

Knystaforsen ⭐️🍀

Me and Hayley first discovered this oasis of smoke and fire in the Swedish woodlands back in 2023. The restaurant – in an old sawmill, by a rippling river, surrounded by pristine forests – was originally Nicolai and Eva´s home. So they treat the guests like family. As Nicolai likes to say, "You come as guests but leave as friends".

Sure, they have a proper kitchen, but prefer cooking outdoors, over flames and embers. It’s sensuous and impractical, in the best sense of the word. It’s as much about camaraderie around a campfire as it’s about enjoying a meal seasoned with the visceral thrill of its unhurried preparation; fire, the primordial culinary art, provides sustenance for the soul too.

Over the course of the evening, they will regale you with a terroir-driven tasting menu that celebrates the wild nature around us. Some ingredients are plucked from the rivers and lakes, others are foraged in the woods, wild game and artisanal products are sourced from local purveyors.

They pair the dishes with Nordic and European beverages, made with an array of fruits, berries, and of course grapes. The non-alcoholic options contain equally hand-selected components and are brewed in-house, or caringly crafted by friends of Knystaforsen.

The house is a casual place, there aren’t many rules here, except for one: making sure you feel at home.

In Copenhagen, we enjoy a private lunch at ⭐ Marchal, set within the iconic d’Angleterre, where a specially devised menu for our group celebrates the great traditions of art de la table. Few restaurants have shaped modern gastronomy as profoundly as Noma, with René Redzepi's relentless pursuit of seasonality, foraging and Nordic ingredients inspiring chefs across the globe.

For many diners, Noma remains the most influential restaurant of the last twenty years and one of the world's most sought-after reservations. This visit offers a rare opportunity to experience the restaurant at the beginning of its next chapter as it reopens in Copenhagen following its international adventure in California.

Whilst menus are yet to be announced, guests can expect the creativity, precision and sense of discovery that have made Noma one of the defining culinary destinations of our time.

F.A.Q

What is and is not included in the price of the tour?

The price of the tour includes the cost of each menu at each restaurant or eatery listed on the tour. This menu has been agreed between Achefabroad and the restaurant or eatery to best represent their culinary offering and cannot be altered other than to accommodate dietary restrictions that we have been made aware of well in advance and that the restaurant has agreed to cater to. Generally speaking, if a restaurant offers a tasting menu then that is the menu that will be offered on the tour. On occasion, the restaurant may offer an A La Carte menu only, in which case each guest will be briefed before the meal on what is included. Any extra dishes ordered outside of the prearranged menus will be charged to the guest who ordered them at the end of the meal, along with their drinks and any applicable restaurant service charge.

Travel to and from  the restaurants and hotels is included in the price of the tour. This may include flights, trains, taxis, ferries or private hire vehicles, or indeed sometimes just a short stroll. This will not include your initial method of transportation to the first meeting point on day 1 of the tour. It will also not include your chosen method of ongoing transport to your next destination at the end of the tour. Travel will be pre arranged by Achefabroad and should the guest choose to use an alternative method of transportation then that will be at their own cost. Should the guest be delayed and miss the agreed departure time to a restaurant from our agreed meeting point then the guest will have to arrange and pay for their own alternative method of transportation.

5 nights accommodation is also included in the tour. A single occupancy supplement applies.

Can I book my own accommodation or will you arrange accommodation for me?

Accommodation  is included in the price of the tour. This is prearranged by Achefabroad. If guests wish to choose alternative accommodation then this will be at their own expense and there will be no discount from the price of the tour. Any room charges accrued during the guest´s stay such as mini bar, hotel bar, breakfast, room service or spa services will be billed to each guest upon checkout of the accommodation.

Can the tours cater for vegetarians and vegans?

Depending on the restaurant they may be able to cater for vegetarians but this will be made clear when enquiring about each individual tour. The tour cannot cater for vegans.

Can the chefs cater for food allergies and / or preferences?

Depending on the restaurant they may be able to cater for food allergies. This will be made clear when enquiring about each individual tour. It may be the case that just one restaurant on the tour can’t cater for a certain allergy (seafood for example) but the rest can. This will be discussed and made clear during any enquiry about a tour. The tour cannot cater to preferences or dislikes.

Do I have to attend every meal as part of the tour or can I just book onto some of them?

The price of the tour includes reservations at restaurants and eateries carefully selected by Achefabroad. These are included in the price of the tour. The guests are asked to attend all these meals. Should a guest for any reason not attend a meal there will be no partial refund for that meal. If you do decide not to attend a meal for any reason (stuff happens I know) we just ask that you let us know at the earliest opportunity.

Will I have free time during the tour to explore the destinations?

Although these are primarily restaurant focused tours there will of course be free time to explore some of the incredible places that we will be visiting. This will be made clear on each tour´s eatinerary.

Do the restaurant experiences include alcohol? Do I get a discount if I don’t drink?

Drinks are not included in the price of this tour and will be billed to each guest at the end of each meal along with any extra dishes ordered and any applicable service charge.

What happens if a restaurant that is on the tour unexpectedly closes on the day we are supposed to visit?

Occasionally, through unforeseen circumstances that may be completely out of ours or the restaurant´s control, a restaurant may have to close on the day we are supposed to visit. If this happens then firstly we will attempt to reschedule the meal within the tour dates. If that is not possible then we will attempt to book a comparable alternative restaurant and each guest will be offered the choice of whether they wish to attend this alternative restaurant. The original booking cancellation will fall under the terms and conditions of that restaurant. If the restaurant that has had to close offers a refund of the cost of the menu that Achefabroad has paid in advance then that refund will be passed along to each guest once it has been received by Achefabroad. If the restaurant´s terms of cancellation only offer the opportunity to reschedule the booking then it will be between the restaurant and the guest to discuss and arrange accordingly. If an alternative restaurant is booked in place of the meal that has been cancelled by the restaurant then payment for that meal will be outside of the price of the tour and will be settled entirely by each guest at the end of that meal or in advance upon booking if the restaurant´s terms of booking necessitate an advance payment.

What happens if Achefabroad is unable to attend and host the tour due to unforeseen circumstances?

In this case, the tour will still go ahead either with an alternative host or with all the guests having been given sufficient and detailed information in order for them to still be able to travel to and attend each restaurant on the tour.

What if the tour is cancelled?

As we are all too aware, over the last few years we have lived in some extraordinary times and it is impossible to predict some events. In the highly unlikely event that the tour has to be cancelled completely then each guest will be offered the chance to join the tour at a rescheduled date. Should they not wish to reschedule then they will be offered a refund based on the individual terms and conditions of each restaurant, hotel or travel provider. If these entities offer a refund under the circumstances of me having to cancel the tour then as soon as that payment is recovered it will be passed along in full to each guest. I urge each guest to take out travel insurance and where appropriate to purchase flights that can be changed or cancelled without penalty.

How much baggage should I bring?

The luggage allowance for the flights is 2 x 25 kg checked bag and 1 x underseat bag.

Do I need to book any accommodation?

All the accommodation is included in the price of the tour. The tour ends after lunch at Marchal and there is no accommodation included on that night.

What is the cancellation policy?

A 2500 GBP  non refundable deposit is required to secure a place on the tour. The remaining balance of the tour price is due before end of June 2026. Should you cancel within 45 days of the tour start date then 100% of the tour price is forfeit. You may attempt to fill your place with someone else should you need to cancel, but only up until 45 days before the tour. The deposit is still non refundable. Achefabroad reserves the right to refuse any replacement guests that you put forward.
