A Three-Day Culinary Escape | July 15th  – 17th 2026

In collaboration with Sera — bringing people and food together.

This three-day journey along Sweden’s west coast brings together open-fire cooking, Nordic creativity, and the relaxed energy of summer on the Scandinavian shoreline. Built around the legendary Holy Smoke BBQ Heyday Festival — where a who’s who of Scandinavia’s (and beyond) most exciting masters of smoke, fire, and mixology come together — the tour offers a once-in-a-lifetime celebration of flavour and craftsmanship. Blending the raw excitement of live-fire barbecue with some of the region’s most compelling contemporary dining experiences, it creates a seamless short escape that moves effortlessly between festival atmosphere and refined gastronomy.

We begin by immersing ourselves in the vibrant world of Heyday — a gathering that celebrates smoke, fire, and community, where some of the most exciting voices in modern barbecue and some of the Nordic’s most talented chefs and bartenders come together for a day of flavour, music, and collaboration. From there, the journey shifts towards a more contemplative pace, exploring the surrounding landscape through a visit to the famous Kullabergs vineyard where we will enjoy a wine tasting with snacks before continuing on to two standout restaurants that showcase the depth and evolution of Nordic cuisine.

Dinner at Fyr, helmed by Jacob & Emelie Holmström, formerly of two Michelin star Gastrologik in Stockholm, Fyr offers a modern, expressive approach to seasonal cooking, rooted in fire and the natural rhythms of the region, while Signum, which currently holds two Michelin stars and a coveted green star — located within the beautiful Hällsnäs Hotel — provides a serene and immersive dining experience overlooking the water, where technique, restraint, and Nordic purity come together with quiet confidence.

Throughout the tour we will stay in a collection of carefully selected hotels that reflect the character of the Swedish west coast, including the relaxed seaside elegance of Hotel Tylösand, the coastal charm of Hotel Visit Örestrand, and the tranquil lakeside setting of Hällsnäs itself. Each stop has been chosen not only for comfort, but for its connection to the landscape and atmosphere that make this region so special in the height of summer.

This is a tour designed to balance energy with calm — from the fire and movement of Heyday to the precision of Nordic fine dining — offering a rare opportunity to experience Sweden through its food, its scenery, and the people shaping its culinary future

Day One – Holy Smoke BBQ Heyday Festival🔥

The tour begins with a full day immersed in the atmosphere of the Holy Smoke BBQ Heyday Festival, one of Scandinavia’s most respected and influential celebrations of live-fire cooking. Heyday brings together an exceptional lineup of guest chefs from across Sweden, the wider Nordic region, and beyond, many of whom are leading figures in modern barbecue, open-fire cooking, wood-driven cuisine and mixology. Festival alumni and expected guests include Nicolai Tram of Knystaforsen, Niklas Ekstedt of Ekstedt, Nick Curtin of Alouette, Genevieve Taylor of Bristol Fire School, Tom Geoffrey of Barang, Daniel Müllern of Tumült, Riccardo Marcon of Barabba, Carl Dreyer of Dreyer´s Streetfood, Billy Durney of RedHook Tavern NYC, Daniel Berlin of Vyn, Martin Lundgren of Lyden Distillery, Punk Royale, Pat Martin of Martin´s BBQ Nashville, Geoffrey Canilao of Balderdash, Klaus Wittrup of Gasoline Grill, Charlie McKenna of Lillie´s Q Chicago, Matt Orlando of Esse and many more....

Throughout the day, guests move freely between cooking stations, tasting dishes prepared over flame, embers, and smoke, with each chef offering their own interpretation of barbecue rooted in technique, produce, and personality.

Beyond the food, Heyday is as much about atmosphere as it is about cooking. A rotating lineup of DJs provides the soundtrack to the day, creating a relaxed but energetic festival rhythm, while guest cocktail bartenders from some of the best bars in the Nordics serve thoughtfully crafted drinks that sit comfortably alongside the food. The result is a festival that feels communal, generous, and unpretentious — a place where chefs, cooks, and guests mingle freely, sharing food, ideas, and time around the fire.

This opening day sets the tone for the entire tour: informal but serious about flavour, rooted in craft, and deeply connected to people and place. It’s a rare opportunity to experience Nordic barbecue culture at its most expressive, before we transition into the more intimate and refined dining experiences that follow.

Day Two – Vineyard Visit | Kullabergs Vingård

After the energy and smoke of Heyday, the pace shifts to something more contemplative as we travel to Kullabergs Vingård, one of Sweden’s most progressive and forward-thinking vineyards. Set within the dramatic landscape of the Kullaberg peninsula, the estate has become a benchmark for modern Scandinavian viticulture, producing expressive wines shaped by the region’s cool climate, coastal influence, and innovative approach to sustainability.

Our visit includes a guided exploration of the vineyard and winery, offering insight into the challenges and possibilities of winemaking this far north. The tasting focuses on a selection of Kullabergs’ current releases, allowing guests to experience the clarity, precision, and evolving identity of Swedish wine firsthand. Alongside the tasting, we will enjoy some snacks designed to complement the wines and highlight the connection between the landscape and the glass.

This visit provides a natural counterpoint to the intensity of the festival — a quieter moment that invites guests to slow down, take in the scenery, and experience a different side of Sweden’s culinary story before we continue the journey towards the coast and the evening’s dining experiences.

Day Two – Dinner | Fyr

Dinner takes us to Fyr, a restaurant shaped by the vision of the husband-and-wife team behind the acclaimed two-Michelin-starred Gastrologik in Stockholm. After years at the forefront of modern Nordic fine dining, the couple created Fyr as a more personal and elemental expression of their cooking — one that draws deeply on fire, seasonality, and the natural rhythms of the Swedish landscape.

Here, the focus shifts away from the formality of traditional tasting menus and towards a style that feels instinctive and grounded, with dishes prepared over open flame and built around carefully sourced produce. The experience is intimate and thoughtful, reflecting the same precision and clarity that defined Gastrologik, but delivered with a sense of freedom and warmth that feels perfectly suited to the coastal setting.

As part of the journey, Fyr acts as a bridge between the energy of Heyday and the refinement that awaits at Signum — connecting the world of live-fire cooking with the evolution of Nordic gastronomy through the lens of chefs whose influence on Scandinavian cuisine is undeniable.

Day Three – Dinner | Signum at Hällsnäs Hotel

The journey concludes with dinner at Signum, a destination restaurant set within the serene lakeside surroundings of Hällsnäs. Holding two Michelin stars as well as a coveted Michelin Green Star for its commitment to sustainability, Signum represents one of the most thoughtful and forward-looking expressions of modern Nordic gastronomy.

Overlooking the water and surrounded by forest, the restaurant offers a dining experience that feels deeply connected to nature — calm, immersive, and quietly confident. The cooking is refined yet restrained, built around seasonal produce, precise technique, and a strong sense of place. Menus evolve with the landscape, drawing inspiration from the region’s forests, lakes, and coastline, and presenting dishes that balance creativity with clarity while maintaining a strong environmental ethos.

The setting itself plays an important role in the experience; large windows frame the lake and shifting Nordic light, creating an atmosphere that feels both intimate and expansive. As the final evening of the tour, Signum provides a natural sense of resolution — a reflective and deeply memorable close to a journey shaped by fire, landscape, and the evolving story of Scandinavian cuisine.

Accommodation | Hotel Visit Örestrand

Our stay at Hotel Visit Örestrand introduces the relaxed coastal character of Sweden’s west coast, where simplicity, comfort, and proximity to nature define the experience. Located close to the shoreline, the hotel offers a calm and understated atmosphere that reflects the easy rhythm of Scandinavian summer — long evenings, fresh sea air, and a sense of quiet space away from the pace of the city.

Rooms are bright and thoughtfully designed, balancing contemporary Nordic minimalism with a warm, welcoming feel. The setting encourages guests to slow down between experiences, whether enjoying a morning walk along the coast or simply taking in the landscape before the day’s culinary programme begins.

Chosen for both its location and atmosphere, Hotel Visit Örestrand provides a relaxed and comfortable base that complements the open-air energy of the Heyday festival and the broader journey through Sweden’s coastal food culture.

Accommodation | Hotel Tylösand

Set beside one of Sweden’s most beautiful stretches of coastline, Hotel Tylösand brings a vibrant and contemporary energy to the journey. Known for its striking beachfront location, and just a short walk from Fyr restaurant, with relaxed Scandinavian luxury, the hotel blends modern design, art, and music culture with the laid-back atmosphere of a classic seaside retreat.

Rooms are spacious and stylish, offering a comfortable place to unwind after a day of travel and dining, while the surrounding dunes and expansive sandy beach create a dramatic natural backdrop. The hotel is also home to an impressive spa and wellness area, providing the perfect opportunity to slow the pace — whether enjoying the sauna, pool, or simply taking time to relax between culinary experiences.

Chosen for its iconic west coast setting and welcoming energy, Hotel Tylösand adds a lively yet restorative dimension to the tour, balancing moments of indulgence with the calm and openness of the Swedish summer landscape.

Accommodation | Hällsnäs Hotel

Our final stay takes place at Hällsnäs Hotel & Restaurant, a tranquil lakeside retreat surrounded by forest and water, where the pace of the journey naturally slows. Set just outside Gothenburg, the property feels secluded and restorative, offering a peaceful contrast to the energy of the earlier days while remaining deeply connected to the landscape that defines modern Nordic cuisine.

The hotel’s individually styled rooms combine classic Scandinavian elegance with warm, understated comfort, many overlooking the lake or gardens. Quiet walking paths, natural light, and the stillness of the surroundings create a sense of calm that perfectly complements the culinary focus of the tour.

Hällsnäs is also home to Signum, allowing guests to transition effortlessly from the tranquillity of the hotel into one of Sweden’s most celebrated dining experiences. As the final stop on the journey, it provides a fitting and serene setting in which to reflect on the week´s progression — from fire and festival energy to the refinement and precision of Nordic fine dining.
